Carrot, Apple, & Kale Salad Recipe

Ingredients:
1 lb kale, chopped
2 carrots
2 honey crisp apples
1/4 cup olive oil
1/4 cup balsamic vinegar
1 tbsp dijon mustard

1. Chop the kale finely. Then, dice the apples into small cubes. For the carrots, you can chop them into cubes as well or ribbon them with a vegetable peeler as I've done in the video.
2. In a small jar, add the oil, vinegar, and mustard. Shake to combine.
3. Massage the kale first with the dressing for 2 minutes. Then, add the apples and carrots and mix to combine. Enjoy!
