Also, using an off-white and an off-black is a really simple change that makes a huge difference

I didn't like to do frontend bc of these types of decisions that had to be made since I'm not a very artistic or tasteful person when it comes to these things.
But sometime ago I actually figured this out on my own, I only use black, white, gray and an accent color (or not even). Simplifies things a lot, and also makes for switching between dark/white themes much easier

I've done same thing in my recent project, it turned out to be great. Minimal design with one accent color. Clients loved it.

In your CSS variable, what would you name the variable? “—default-color”? Or “—primary-color”?

The problem with this that we start to normalize boring. Every website has the same style or at least a rendition of it.

Trust your gut. You know what you don't like. Keep messing around with it until you do like it. And if you're unsure, step away from it for a day. Then come back to it with fresh eyes. You're a dev, backend or frontend, working on a personal project, you have the luxury of time. The reason designers get paid is because they are quick with their design intuition. You may not be so quick, but you still know what looks good and what doesn't.
