Sweet Potato Corn Muffin, why did I not know about this before now

Are you thinking about your fall recipes yet? We have been, and this idea came up, so Stephanie decided to make them. These muffins are so moist with flecks of sweet potato, and sweet enough from the condensed milk that no extra sugar is needed. So, if you are thinking about your fall table, think about adding this recipe to it. Recipe below! And stay tuned for the video of the Sticky Toffee Sauce to come.

Ingredients:
2 lg sweet potatoes *
1 can sweetened condensed milk
1 egg
1 Tbsp self-rising flour
1 box Jiffy Corn Muffin mix
Directions:
Preheat the oven to 450 degrees. Scrub potatoes and using a fork, poke several holes in the potato. Place on a sheet pan lined with foil (easy cleanup). Bake for 45-55 minutes or until fork tender.
Reduce oven temperature to 400 degrees.
Remove the peeling from the potatoes and place in a large bowl. Mash potatoes well. Stir in sweetened condensed milk, egg, flour, and Jiffy Corn Muffin mix. Combine well.
Spray a 12-cup muffin tin with baking spray or cooking spray. Scoop corn muffin mixture into cups, filling 3/4 full.
Bake for 18 - 20 minutes or until done.
Optional:
Add 1 tsp ground cinnamon
1/2 tsp ground nutmeg
you can also use canned sweet potatoes or pumpkin
Serve with butter, sticky toffee sauce, or your favorite topping.
You can also mix this with an electric mixer.
