Cooking time will depend on size of meat pieces from butcher and quantity. I recommend 1-2 hours in a Dutch pot or heavy cast iron pot or pressure cooker- until meat is tender.
Dry spice
Black pepper 1 tsp
Seasoned salt/ adobo 1 tsp
All spice 1 tsp
Garlic powder 1 tsp
Curry powder 2-3 tablespoons to season meat initially and 2-3 tablespoons later to season oil
I use “Blue mountain” brand here in the usa 🇺🇸 but many prefer the “Betapac” brand of curry from Jamaica
Sometimes I also add Indian style curry powder. Every curry mix tastes different depending on the amount of Tumeric or other ingredients.
( add more or less of the spice above depending on your preference )
Vegetables/ seasonings
Scallions 3-5
Fresh thyme- 2-3 springs ( remove the leaves before blending but if you don’t plan to blend the vegetables you can add the thyme whole to the pot and remove once cooked. If you don’t have fresh thyme use 1 teaspoon of dried thyme.
Bell peppers 🫑 ( red/ yellow or red) 2
Scotch bonnet pepper(s) 1-2 depending on how spicy you like it! Remove seeds before cutting.
Ginger - half a thumb size or amount
Garlic 🧄 1 clove
Tomatoes 🍅 2
Optional ingredients:
Beef stock or water 1 cup to add to meat ensuring you have sufficient gravy .
Once meat is cooked:
Cubed 2-3 potatoes or about 1.5 cups
Sliced carrots 1 cup
( Don’t forget to add a sliced onion 🧅 also once meat is almost cooked or with potatoes and or carrots 🥕
Serve with white rice or rice & peas
Save for later.
