Richaad's Deep Space Dish Pizza

203g All-Purpose Flour
30g corn meal
1 tsp kosher salt
1/2 tbsp sugar
3.5g instant yeast
150ml warm water
1/4 cup melted unsalted butter
1 tbsp olive oil

Pre-made pizza sauce (as detailed in previous episodes)

8oz Shredded Whole Milk Low Moisture Mozzarella
1/4 freshly grated Parmesan

Combine dry ingredients in bowl of stand mixer fitted with dough hook attachment. Add warm water and melted butter and beat on low speed for 5 minutes, or until dough begins to pull away from the sides of the bowl.

Remove dough and place in bowl coated in olive oil and covered with aluminum foil. Let rise for 2-3 hours, or in fridge overnight. Halfway through, punch dough down to remove any air bubbles and fold a few times before returning to bowl.

For the sauce, use recipe as detailed in previous episodes. Cook on stove-top for 10 minutes or until sauce thickens slightly. Preheat oven to 425F. Affix available aluminum foil to chef's hat to prevent unwanted interference.

On a lightly floured surface, roll dough out into a 12-inch round. Place dough over 9" x 2" spring-form cake pan. Using your fingers, gently press dough round into the cake pan until dough is pressed into corners of pan. Trim any excess dough left over top of pan and set aside or discard. Brush dough with olive oil and fill cavity with mozzarella and prepared Parmesan. Spread evenly, then top evenly with prepared pizza sauce. Sprinkle additional grated Parmesan evenly over top of the sauce.

Place cake pan in baking sheet and bake on center rack for 20-30 minutes, or until crust is golden brown. Remove pizza from oven and allow to cool for 10 minutes before removing from pan. Serve and enjoy. Stank face not optional.

Note: This is my first time making a deep dish pizza like this. It was pretty good! Though if I made it again, I'd probably want to make the dough thicker and sauce thicker than what you see in the video.

Also, the reason for my brief hiatus was because Rachel and I took a much-needed vacation out of town. During this vacation, we unfortunately came down with some type of illness and have been slowly recovering. Attempting to cook food while your sense of smell and taste is impaired is an interesting task... regardless, we are doing better now and hope to return to semi-regular uploads.
