How to make a Low Carb Cheesy Zucchini Egg Pie

I’ve had this recipe for a while now, and don’t remember where I found it, but I love egg dishes so I thought I’d give it a go. This would be great for any meal - breakfast, lunch or dinner. The original recipe is meat-free, but I had some bacon bits I needed to use up, so I added those - diced ham would also be nice. The nutritional stats don’t include the optional meat.

Prep Time 10 min, Cook Time 25 min, Total Time 35 min

Serves 8

Ingredients

• 1 dozen large eggs
• 1 c. ricotta cheese
• 1 T. onion powder
• 1 tsp. sea salt
• 1-1/2 c. zucchini, grated
• OPTIONAL:  1/2 cup bacon bits or diced ham
• 1 c. mozzarella, shredded

Instructions

1. Pre-heat oven to 375 F and lightly grease pie tin (or something similar)
2. In large glass bowl, beat eggs
3. Add ricotta, onion powder and salt to the egg mixture, blending thoroughly
4. Stir in zucchini (and bacon/ham, if using)
5. Place the pie tin on a cookie sheet and gently pour mixture into pie tin
6. Carefully place in the oven and bake for 20 minutes
7. Add mozzarella (optional) and bake for another 5-10 minutes, or until cooked through

Per serve (1/8 of the dish): 166 calories, 10.6g total fat, 4.3g saturated fat, 3.7g total carbs, 0.3g dietary fibre (3.4g net carbs), 14.3g protein.

Reminds me a lot of quiche. I wonder if you could use pasteurized liquid egg whites instead of whole eggs. If just prefer whites only. I bet if you added a drained jar of pimento that would be pretty for a Christmas pie breakfast along with green of zucchini. Thank you for your creative culinary skills again. 😊.
