I found thawing baked goods in the refrigerator works better. Sometimes I was getting wet mushy spots, especially on bread. Takes a little longer in the refrigerator but I don’t get any condensation.

Used to work at McDs. Our cakes came frozen. We never naked them in the store, just let them thaw a few hours before the customer would come to get them. No one ever knew.

Great tip. Pastry chef by trade hereand I freeze mine when they're warm to lock in moisture. Frost/fill while frozen for less crumb. There's no right way, just what works best for you. Blessings and happy baking. 😊

The cling wrap plastic is slightly porous. Water will leach out from the frozen cake over time. Using zip lock bags or air tight containers will alleviate this problem and you will be able to store your frozen cakes (and other items) for much longer times.
Similarly for refrigerated supermarket items, such as meat with clear plastic cling wrap. Place these things in an air tight bag in the freezer and they’ll last much longer.

Another alternative option is to microwave cake batter in silicone molds: look it up. You don't get the darkened outside that you would if baking in an oven, but it only takes 10 minutes to bake 2 layers. Once frosted and decorated, you can't even tell the difference.

Thanks for the tip! I’ve been doing this the last couple years and it has been so great! Sometimes I bake two at a time, we have one that night, but then I have one to take to someone later. 😀 🎂

They're easier to handle once cooled or frozen too. Saves so much time.

2, 3 weeks? I freeze baked goods for multiple months! A well-wrapped goodie, then placed in a tightly closed container, will taste "as if you baked it that day."
