I’m pretty sure it’s “star quality” one’s inherent talent for performance. When Akane mimics Ai who is the peak of what any star is, she pours her heart and soul into performing this imitation so that she can impress Aqua, and in turn she reaches her own peak star quality.

*This is where it starts getting really theoretical and has a bunch of possible holes in the argument:*
Aqua and Ruby throughout the show have an inherent charisma that made people captivated to them despite minimal effort, or their quite average abilities. They exude talent without having abilities.
Ai has the inherent charisma and the learned ability to engage and entertain to back up her charisma.
So Ruby and Aqua who match only one of those qualities most of the time, have one starred eye.
Akane who was able to exude Ai charisma and used her own ability to captivate an audience, temporarily got two starred eyes.

The eyes seem to be connected with love & lies/deception.
Especially if you listen to the ost Idol.

Akane in the most recent episode (ep7) has also developed those eyes after analyzing Hoshino Ai. Aqua might be feeling some mild trauma because of this though.

It’s kinda like how when ai died, the stars in her eyes disappear and when aqua thinks about the person who might be responsible for ai’s death, he enters a state of a whole new level of hatred and the star in his eyes take on an empty, dark blue state.

Well the way I take it is that the eyes show the amount of “star power” or talent someone has in the industry and having one eye indicates potential, two being visualised talent, the black eyes to me only appear when someone understands the harsh reality of life such as in the world of showbiz and reflect their true feelings of the person, Ai being able to change willingly between the two shows the nexts stage of talent and lies being fully mastered. That would explain why Ruby who is innocent didn’t get black stars but Aqua did. There is a lot more about the eyes I believe but I’m keeping it short

Perhaps the eyes symbolize a trait or thing exclusive to Ai. Ruby and Aqua have them because they are her children, and Akane acquired them via replicating Ai so deeply.
They might also symbolize enthusiasm, potential, or something like that, which would explain why Aqua's eyes go dark when he plots revenge

I think the eye is the aura of that character, which is why in ep 7 when the actress started acting as Ai the star appeared in her eyes. There's certain vibe to certain people when we're around them that we can't really tell or have no idea how to describe with words, but it is there when you're around them, that aura is demonstrate by that star eyes and it's so effective.

I’ve read the entire manga. (Well what is there so far) The star eyes show up on multiple characters not related at all to the Hoshino family, usually when they’re expressing a strong emotion or performing.

when we all see Aqua's eyes
are in the darker color it means
he's thinking of something dark
or planing of a dark plan

but if we see it in a lighter color
it means he is thinking fine...

that is why in the video said

As a manga reader it’s still vague yet it is still kept in both anime and manga of the visual representation of the characters state in their eyes (and it’s possible other people IF THEY HAVE THE SPARK OF STARDOM get those eyes)
