Chef you are really amazing! I love watching and learning from you.. have you ever made mole’ ? When I do it I debone the chicken so my kids can make little burritos out of it or just eat with tortillas right out of the bowl.

What is the taste difference between the original and the bagged version? If i should guess the original dry aged is a little sweeter and the bag dry aged is a little sour?
