This is the first of a Between Two Forks original series call Battle of the Blades. Where we compare and review kitchen knives.

This is the first episode of Battle of the Blades: Chef Knife. In this video, we are reviewing the Misen Chef knife. Called by some as the holy grail of chef knives. We shall see if this baby holds up to its reputation.

Any knife can be sharp.. Can it retain its edge is the question. Challenger is sharp as hell. But after a few hours of line use it loses its edge.

yeah but, if the Cutco ever gets dull or fails, they back a lifetime warranty...of the knife!!!! Not the owner! And they offer free factory sharpening for a cheap shipping charge! (10 knives for $9 as of 2019) I’ve worked in restaurants and cook at home all the time and these knives are the real deal. I don’t stray from Cutco and if you haven’t added these knives to your kitchen arsenal, you are missing out on one of the last “great American made” products!!!

Well I don't know about a "Battle of the Blades" this seemed more like a Misen commercial. But yeah they sent you one for free. My Cutco knives are 20+ years old and still get daily use. I have sent them in to be serviced (for free) about once a year, they repair (Friend tried to chop cow femur with the cleaver) and have replaced (had a loose handle on a table knife since my son-in law used it to cut sheet rock) knives during these 20+ years. Did I mention all was free? YES I spent more for mine, but my daughter will inherit these knives when I'm gone. But not her husband... After cutting sheet rock with one of my knives he isn't allowed to touch them.

My experience is with the Misen pairing knife mainly. Love it out of the box. Beautiful, sharp and beefy. Is the steel a little soft? Did it lose its edge quickly? Did it stain? Yes, maybe and yes. Still love it but I’d prefer a lighter and rounded handle. The knife will balance in the back of the handle, blade up. Dangerous! Best looking pairing knife in my block. I’m sorry that I’m not keeping the 8” chef knife for myself. That was purchased a gift, soon to be gone.

I haven't seen a Cutco's cutting edge up close...but recently (this morning) I saw a "how to buy knives video (KNife Merchant)". And they brought up a good point about blades with a concave profile above the cutting edge...mentioning a Mercer...shop owner said the concave grind makes the cutting edge "flair out"...not sure if the same is true for the Cutco. Hence your problem.


Misen...will look into it. But I wonder if it's cutting ability isn't just the fact that it's "out of the box sharpness" was better.


AUS8..not a nice steel...but for a home cook...I too doubt it matters. I wonder if Misen has knives using better core steel..

I've had my Cutco knives for 2 years and just sent back for free sharpening (minus shipping). My wife and I use them almost every day. Love my cutco knives.

Cutco are cheap made knives for an expensive price. They can afford to replace or sharpen your knives cause you are buying $50 set of knives for $1600 bucks! They are junk. Do not be a fool purchasing 440 stamped steel for there outrageous prices! Buy quality forged knives like zwilling or wusthof for example.

I absolutely love my cutco knives and I just added the veggies chopper, meat cleaver, hardy slicer and the long hardy slicer bread knife to my collection. Ok here is a sad story for you some years back I had a good set of of cutco and my wife had no idea what they were and went to an funeral with her family and friends and she supplied much of the food and yes you got it the utensils included my knives of which neither her nor anyone else knew what they were and long story short they never came home and I never seen 5 of my knives again. I honestly had no idea she brought them with her for atleast a week or two by then they were long gone. I have since added them plus back and loving every cut...

I thought it was made of AUS-10 steel, at least the newer one is.
