Onion Rounds - An Easy Appetizer! Simple and Delicious!

Onion Rounds

1 large onion, minced
1 cup mayonnaise
3 Tablespoons Parmesan cheese
Bread slices cut into rounds (or your preferred shape)
Paprika

Mix together the minced onion, the mayonnaise, and the Parmesan cheese the night before. Refrigerate overnight until ready to construct the next day.

Spread the onion mixture on the bread rounds. Sprinkle with paprika and broil until heated. Serve hot.

Before my mother died in 1959, we had onion sandwiches almost every night as a bedtime snack. Two slices of bread with butter on both and a thick slice of onion between them. I now use buns instead of bread.

My dad was a Naval Flag Officer and, when he was home, my parents were obligated to give cocktail parties. A variation of this recipe was one of my mom's mainstay canapés. In addition to the onion and mayonnaise, her version used extra sharp cheddar cheese, a few dashes of Tabasco (or other) hot sauce, and lots of coarsely ground black pepper on small crustless squares (cut each bread slice into 4). She toasted one side of the bread, added the cheese mixture to the other side, then broiled the tops until they were bubbly and deep, golden brown. They were crunchy, unctuous, and _delicious_ and a perfect compliment to mixed drinks. Thank you for posting this recipe, Tom and Melissa.

I have been making these for 30 years. If you toast your bread lightly before spreading on filling, they are more sturdy. Then put on spread & run under broiler. My family loves these. They make a great appetizer on cocktail bread loaf, too.

We are onion lovers also. As a young person growing up we were very poor. One of our favorite ways to eat onions was to put a slices of onion on homemade leftover biscuits Thank you for this recipe. I will definitely try it.

I like to use cocktail rye bread or pumpernickel cocktail bread. One of our favorite recipes. I only use mayonnaise and diced onion, spread it on the bread then top it with a small square of cheddar. Then under the broiler until cheese is melted. Yum

I enjoy something a little heartier than sandwich bread, but I reckon this would be just as yummy on a slice of artisan bread or even an English muffin! Thanks Mr. Tom! ❤️

Onions are so healthy for us. I love onions. They're good for so many things. Inflammation for 1. I haven't been able to eat that many and I can tell the difference. Will definitely try these. Could top with diced green onions or cilantro too. Also celery seed. Yum.

When I was growing up, I never ate lunch at school. When I got home, I would use a cold piece of cornbread or biscuit and make an onion sandwich with mayo on it!! I would definitely eat this at my current age of seventy!!
