I really want an AC game that takes place during the time period of “The Tragedy of Jacques De Molay” The one that you play in a the beginning of the the game. Sometime during the Middle Ages, in England. You could have tailing missions on horses, participate in full fledged battles every once in a while (not that much), and they could introduce some new interesting weapons from mid evil times which would provide lots of variety when buying weapons. Maybe even introducing crossbows. You could also buy horse armor if your going to be riding into a battle. It would also be cool if you could go on missions to assassinate Vikings to stop the from gaining power in England.

Another fun factor they could include is traveling to France, maybe to peruse a Templar. Just because I think France would be a cool place to explore. And adding France would also create an open world feeling.

As for stealth, you could move through huge crowds in lowers class sections of kingdoms when a Templar is traveling through those parts, You could hire groups of high class citizens to blend in with, and you would be able to disguise yourself as a plague doctor. Make sure you watch out for pick pockets among lowers class areas, the could steal money, medicine, valuable items, ect.
