Always amuses me when characters go basically nowhere in-game but will suddenly launch themselves to the moon in cutscenes as if its something they could always do.

TECHNICALLY Pit can only use Palutena's gift of Flight for 5 minutes before his wings burn up but this only happens once during a cutscene for gameplay's sake

Not sure how programmable that would be, probably near impossible if I had to guess, but Pit should only be able to jump an infinite amount of time for 5 minutes, each jump after that should set him on fire and deal 80% in self damage (mmm, chicken wings)
As for Captain Falcon, the anime made it pretty clear he can JUMP

I think that, instead of counting pixels, you guys could've divided the original game jump height by original game character height, and then multiplied that result by the smash character height. ya know, the butterfly method from school!

you might have to still use pixels to determine the character heights, but it'd be way more accurate, because there's no way that Simon's jump should be less than his own height

While Kirby and Dedede do get infinite double jumps in their games, the actual height you get per Button press is rather small. you have to really spam the button to go up fast, and as such, the height of their multijump should have been nerfed even though they have infinite of them.

If you count that advent children scene, than you can make Mario jump to heaven then. In Mario Strikers Charged he can literally jump higher than a building
