Air Rivera Most chocolate chips contain less cocoa butter and have added oils that make tempering difficult.

halo, i wonder if the amount of chocolate can be cut down a little bit?Since i don't need to use so much chocolate ...How to handle with the chocolate left? thanks!!

Useful for me, because I don't like melting in a microwave since I don't own any plastic containers that are large enough for this, and using a glass or ceramic bowl for this in the microwave makes the chocolate too hot too quickly. So I prefer doing this double boiler method. Thanks.
