Surprisingly EASY! Healthy Vegan TOM YUM Soup!

💫 A Couple of the Items From This Vid:
Some healthy noodle options (if you so desire!)
🌱 Tom Yum Soup:
8.5 cups (2 liters) vegetable broth
10 kaffir lime leaves
5 stalks lemongrass
10 Thai chilis
2 inch piece of galangal
5 cloves garlic
350g mushrooms (I used 200g cremini & 150g black oyster)
2 onions
2 large tomatoes
1/2 cup lime juice
*If your soup is not salty enough, you can add up to a few more TBL fish sauce. If you think it needs some sweetness, you can add a few tsp. of sugar.
For garnish: a few sprigs of coriander
Add when serving: any cooked veggies you like, noodles (see above for some healthy noodle options from Amazon!) or even some tofu. Enjoy!
