Cinnamon Apple New York Cheesecake Recipe

Ingredients:

Crust:

Digestive biscuits, crushed: 200g

Butter, melted: 80g


Cinnamon Apple Filling:

Apples: 2 (peeled and diced)

Butter: 30g

Sugar: 30g

Cinnamon powder: 1/2 tsp

Lemon juice: 1 tbsp


Cheesecake Layer:

Cream cheese: 500g

Sugar: 150g

Eggs: 3

Vanilla extract: 1 tsp

Heavy cream: 120ml

Cornstarch: 2 tbsp


Instructions:

1. Prepare the Crust: Crush the digestive biscuits and mix with melted butter. Press the mixture into the bottom of the cake pan to form a firm layer. Place in the refrigerator to chill.


2. Make the Cinnamon Apple Filling: Melt the butter in a pan, add the diced apples, sugar, and cinnamon powder, and sauté until the apples soften. Add lemon juice and cook for another 1-2 minutes. Set aside to cool.


3. Prepare the Cheesecake Layer: Soften the cream cheese at room temperature and beat until smooth. Add sugar and continue beating. Add the eggs one at a time, beating well after each addition. Then add vanilla extract, heavy cream, and cornstarch, mixing until smooth.


4. Assemble the Cake: Pour half of the cheesecake batter into the pan, then add a layer of the cinnamon apple filling. Pour the remaining cheesecake batter over the apple layer, and finish by spreading the remaining apple filling evenly on top.


5. Bake: Preheat the oven and bake the cheesecake at 150°C (300°F) for about 1 hour, until the top turns lightly golden. Let the cheesecake cool in the oven, then refrigerate for at least 4 hours.


6. Serve: Slice and enjoy your cinnamon apple cheesecake after chilling!
