I followed the recipe exactly and it was horrible. Give me your suggestions on sweeteners to use.This should have been absolutely awesome. Next time it will be.

Hi Joe, this is pretty late you've probably already found your sweetener but just in case, I am Diabetic and have had my battles with sweeteners. I've never tried Stevia, just word of mouth advise was enough for me. I heard nothing but good about Swerve. Tried it, very surprised and satisfied with it. 1tsp = 1tsp of sugar. Comes in white and brown granular both. I love my coffee in the mornings was afraid I was going to have to go without it till my last day...imagine the mood I'd be in by the time I reached the Pearly Gates. If you haven't tried it yet go ahead, I hope it works for you.

I am doing low carb. Pinterest is great for low carb desserts. I use almond flour for my crusts. Also the sweetener I prefer is Xylitol. It tastes wonderful right out of the bag. Cheesecake is wonderful for low carb. Also I just ordered CarbQuik from Amazon, it’s like bisquick but low carb. Pancakes and biscuits are great every once in awhile with sugar free syrup.

Stevia tastes horrible. Melissa, the secret is the induction phase. The first week of absolutely, no sugar or sugar substitutes AT ALL. For some people it's a week for me it's more like 2 weeks of no sweets (even sweets like stevia, etc). Because your brain still thinks you are getting sweets the cognitive part still communicates with the physiological. If you can't control yourself eat jello. Increase the fat, keep the protein moderate (I have to keep protein lower than moderate because my body converts excess protein into sugar) and keep carbs below 20g per day. You'll have to play around with the macros until you figure out what works for your body. I finally started to get things right with Dr. BERG. He has a YouTube channel...but by far, my favorite is AllyMcWowie. She lost a ton of weight with simple, inexpensive meals. Also on YouTube... look them up. Tell Ally Carolena sent you. Hugs!!!!

You are a great guy helping out Melissa like you do . I did low carbs for a long time, . I used liquid Splenda , put some drops in your coffee or tea it is great, you can put it in a lot of things. I order it from amazon it comes in small yellow plastic bottles easy to put in your pocket . The taste of it and the taste of the stuff in the little yellow packets are all togather different , l won't use the packets . I'm not as strict now as I was years ago, we now use it in cereal , oatmeal and have used it in homemade ice cream.

Hey Joe. Stevia has a terrible aftertaste, so we use Truvia for some of our baking. The keto chocolate chip cookies are awesome with it. For those sweet cravings, check out Robert Irvine’s Fitcrunch bars. I get the snack sized chocolate peanut butter bars. When you do the math, they are very low in carbs and sugar plus high in protein. OMG, they are so good! Just don’t eat the whole box! Lol....one per day takes care of my cravings. I’m on day 20 and down 9 pounds👍. Good luck to Melissa!

when i did keto i lost 150 pounds. Sweets werent my big thing but when i craved them i went for things like sugar free jell-o either pudding or gelatin.
Id also make protein shakes with pb2 and sf butterscotch jello and cocoa powder (tasted like butterfinger)

Sweet Drops also makes a bunch of flavors you can add those into a blender of greek gum and freeze it a bit to make a protein froyo.

Joe try adding a couple shots of strawberry Mio to your filling should help with the sweetness.
Also the monkfruit is much better then stevia

Brand of stevia matters. Some are much better than others. Some people prefer monk fruit. Swansons brand its pretty neutral. You can try some sugar alcohols like organic xylitol or trehalose

Checkout headbangers kitchen and keto connect. I started keto about 2 months ago and lost 2 inches off my waist so far. For sweets go with Lily's chocolate, sugar free jello, also whip up homemade whipped cream and add in chocolate powder. I also used vanilla and/or maple extract to cover up the after taste.

Bless you Joe, you are sweet to fix her something sweet and help her on her mission. I wonder about that recipe. It seems the sugar amount got swapped around. Less sugar in base and more in the filling? Old fashioned red rhubarb has to be stewed down with lots of sugar cause it is bitter. Did you use the right part of the rhubarb stalk? Don't use stevia for anything again. It is so nasty tasting. Try a natural sweetener. Like coconut sugar. Next time you want to be sweet look up a recipe on you tube. Lots of keto channels. I think I saw something with chocolate. You are a catch !!!

Stevia isn't Artificial, it's a plant that is a sugar substitute. Next time use Monkfruit or Erythritol. Stevia at that amount is INTENSE and overkill since it's a 100 times sweeter than sugar and can have a bitter aftertaste. Allulose, Monkfruit and Erythritol can be used measure for measure.

I would try that sweetener you showed at the end, but also a Xylitol-based sweetener (I think you used some) - maybe a combination of the two, but low amounts. These tend to be a stronger sweet flavor than the equivalent amount of normal sugar. I've seen Xylitol -based sweeteners specially made for baking (most at the supermarket are for coffee etc). Just read the pack carefully. Steer clear of stevia completely for baking, tastes nasty.
