Recipe:
2 STICKS UNSALTED BUTTER, SOFTENED
1 CUP GRANULATED SUGAR
1/2 CUP BROWN SUGAR
1 CUP PUREED SWEET POTATO
4 EGGS
1/2 CUP BUTTERMILK (YOU CAN ADD MORE IF BATTER IS TOO THICK)
2 TSP. VANILLA
3 CUPS SIFTED ALL PURPOSE FLOUR
1 TSP EACH, BAKING SODA, SALT AND CINNAMON
1/2 TSP NUTMEG
2 CUPS CHOPPED PECANS, DIVIDED FOLD 1 CUP IN BATTER, SPRINKLE 1 CUP ON TOP OF BATTER
PREHEAT OVEN TO 350*
CREAM SUGARS AND BUTTER UNTIL FLUFFY. ADD EGGS 1 AT A TIME, BEATING AFTER EACH.
ADD PUREE'D SWEET POTATO AND VANILLA. MIX WELL.
WHISK TOGETHER, FLOUR, BAKING SODA, SALT, CINNAMON, AND NUTMEG.
ADD FLOUR AND MILK, ALTERNATING, BEGINNING AND ENDING WITH FLOUR MIXTURE.
POUR INTO GREASED AND FLOURED TUBE PAN.
TOP WITH REMAINING NUTS AND BAKE AT 350* 45-55 MIN
REMOVE FROM OVEN AND LET COOL TO WARM AND THEN DRIZZLE BUTTERMILK GLAZE OVER CAKE WHILE CAKE IS WARM

2 TBSP MELTED BUTTER
1 TSP CAKE BATTER EXTRACT
DRIZZLE BUTTERMILK IN A LITTLE AT A TIME TO DESIRED CONSISTENCY. POP IN MICROWAVE FOR A FEW SECONDS
TO MAKE IT POURABLE, BUT NOT SO THIN TO BE FULLY ABSORBED BY THE CAKE
