Welcome to Collard Valley Cooks! Have you wished you could make your sweet potato pound cake taste like Mama made it? You can do it!

Featured Recipe out of our Vol. 4 Cookbook:
- 12 CUP BUNDT PAN (REQUIRED)
1 CUP SHORTENING
3/4 CUP SALTED BUTTER (ROOM TEMP.)
3 CUPS GRANULATED SUGAR
2 TSP. BAKING POWDER
1 TSP. SALT
9 RAW EGGS
1 1/2 CUPS COOKED SWEET POTATOES (BLENDED SMOOTH)
3 CUPS ALL-PURPOSE FLOUR
2 TSP. VANILLA FLAVORING
1 TSP. CINNAMON OR PIE SPICE (OPTIONAL)

Options: BRUCE’S CANNED YAMS: Pour into microwavable bowl and heat on high for 4 minutes. Blend well with an electric mixer – until smooth.

FRESH SWEET POTATOES will have more flavor. Bake them and then blend until smooth.

Preheat oven to 350 degrees. Use electric mixer to mix shortening and butter until creamy - add sugar and mix until light and fluffy. Add baking powder & salt. Now add eggs one at a time. Add potatoes and mix well. Add flour 1/2 cup at a time. Add flavoring and spice.

Mix on medium/low speed for 2 minutes. Pour into well- greased, fluted 12 cup Bundt pan. (Fill ¾ full and do not overfill) Bake for 40 minutes at 350 degrees. Turn oven down to 325 degrees and bake for 50 more minutes.

On May 18, 2017, as I reflected on my battle with cancer, I realized I hadn’t taught my daughters how to cook. Concerned that if the cancer returned, I wouldn’t leave them with essential kitchen skills, I decided to record my favorite recipes on video.

I was real young My grandmother used to take pound cake she made with butter on it toasted in the stove and get me a big glass of milk when I sit in front of TV and it was so delicious. My grandmother used to make the best pound cakes and cakes, everyone in town would have my grandmother making cakes for them.This one looks like it will be so good. Thanks

What an amazing cake. It looks delicious. I have made sweet potato cakes before but I did mine in layers and frosted with cream cheese frosting. I need to try the pound cake. Thank you for sharing this delicious recipe with us.

That cake looks delicious. I can see the difference when using White lilly flour the crumb is finer and it looks fluffy. Thanks for sharing Tammy. 🙂❤

White Lily is the best, hands down. It's what my mama has used for years and so do my sister and I. I've tried other brands in the past to save money but they're just not the same quality. I don't know what they do different but this is one thing I buy name brand of. I like saving money where I can, however, there are certain things that you just can't substitute.
Another great video and recipe Tammy. I've never done that before but I'm definitely going to try this one. It looks so delicious. Since I don't like heavy, Xtra sweet cakes, this looks perfect. You're right about putting the flour in the end and not to beat it too much. The trick is whipping everything else really good and it makes it fluffy and then the flour finishes it off to perfection. I like the warm up my pound cake too and slather plenty of real butter on it and enjoy.
Is that a Christmas cactus in the background? It's so beautiful Tammy. Those blooms are stunning. Love how you have done your new house. Those little pans you made the little ones in are gorgeous. Are they linked on your Amazon account?

Kathie says…Good Morning Tammy!! I just watched your sweet potato pound cake recipe/demonstration, and as always, I enjoyed it. If you would have used boiled, fresh sweet potatoes instead of the canned…about how many would you use? That cake looks wonderful! I bet it is good with a dollop of whipped cream!!😋. I am going to make it this afternoon, cut it into fourths…wrap up and freeze 3/4 of it to enjoy another time. I have to do that, otherwise I’d be picking on that cake until it was gone!!! 😑 Today I am going to butter-fry Blue Gill Filets, make some home made French fries & Cole slaw. That Sweet Potato Pound Cake would really top off everything just fine and dandy!!!😊 Have a nice Saturday!! 🌷
