Well we all know Koko didn't actually think and say that but honestly it doesn't matter, the message is still as valid.

First of all, Penny wasn't her "trainer" like you might think. She was a scientist doing a long term study. But yes, she had to train her to do it. Also that clearly was an edited message by the camera people. Probably giving her specific things to say and editing it between attempts and put it together. They're right, but I think it's pretty fucked up that Koko's last message wasn't likely even her own.

Keeping wild animals captive in cages is animal cruelty.
