What size SD card would you recommend for say 1 year of logging?

You're obviously located in the southern hemisphere. Wherever you are based, the humidity is incredibly high... 91%. You must have been sweating in January 2017.

Need to drink plenty of liquids.

Can this design be easily turned into a moisture meter ie where you stick 2 probes into a wall or timber to measure the moisture content?

When making use of the PLX-DAQ, does that mean that the computer/laptop has to be connected all the time to the data logger to be able to record the date and time if the RTC module is not used?
