Roast beef can appear green for a few reasons!

1.) Iridescence:
When light hits meat, it can split into colors like a rainbow, creating an iridescent or greenish cast. This is due to the microscopic structure of the muscle fibers in beef, which diffract light. Iridescence is most common in the muscles of the round, navel, and brisket. It's not a sign that the meat is spoiled, and it's safe to eat as long as the meat is within its use-by date and has been stored correctly.

2.) Pigment change:
Heat or processing can change the color of pigments in the muscle, giving meat a greenish tint.

3.) Spoilage:
A green color can also be caused by spoilage organisms like green or gray mold. Spoiled cooked beef may also be slimy or sticky and have an off-odor

I was surprised to see you can buy canned au jus (It's a really beefy broth). I prefer to make it home myself, but it's nice to see that it's available as a shortcut to those pressed for time. My first time trying this sandwich was at a La Madeleine 🌸

Beef when in a pkg like that can have green/purple/rainbow effect. If it’s slimy or smells it’s bad. Always check the expiration date.

Great job, Momma! Maybe next time Josh can do a slow cooker French Dip. You just take a 3 pound chuck roast, a can of beef consommé, a packet of Italian Seasoning, and a whole jar of pepperoncini peppers. Cook it on low for 6 hour or high for 4 hours. Then just split any type of soft roll and put a slice of Provolone cheese on it. The roast will be falling apart, so put a good amount on the roll and use the gravy left in the slow cooker as your dipping sauce. It's easy and it makes at least 6 big sandwiches. I know that he can eat. He and Momma demolished those crab legs. P.S. I know that recipe was good, because Momma wanted slap her leg but had both hands full. She wasn't letting go of that plate. Too funny.
