How to Change MIDI Velocity in Ableton Live 11

In this #shorts video I'll explain the MIDI Velocity Lane in the MIDI Editor view. You can show and hide the velocity lane by clicking the disclosure triangle in the lower-left corner of the MIDI Notes Tab. The velocity of each MIDI note can be adjusted individually, or use CMD-A to select all MIDI notes in a region and adjust them all as a group. You can also adjust velocity by using CMD-click on any of the MIDI Notes. Dragging up and down with CMD held down will adjust the velocity.

Does anyone know if there's a way to ALWAYS have Ableton Live 11 assign each and every MIDI note a full velocity, instead of a randomly lower one?

I used to be able to press C and V to lower or raise the incoming midi note. Still listed on Ableton shortcuts but can't get it to work in 11. Coming from 9
