Fun Fact: One of Russia's first heat seeking tests wound up striking the jet that launched it. Why? It was set so sensitive that it almost instantly locked onto the radiative heat from the jet's nose cone - who had been flying supersonic for some time before slowing to fire. It basically curved upward, immediately, and slammed into the jet's underbelly. Thankfully it was not filled with any form of payload.

First of all, the rocket will be fired with a velocity equal to the jet. And the jet firing a missile usually tries to get away from its target.

Fun Fact: If the Jet is able to warp after launching the missile, this will in turn keep both the jet and the pilot in one piece.

That's no longer an issue, the IIR seekers cannot confuse targets as they don't guide by infrared, but by imaging infrared, which means the seeker has a thermal image of its target and the only way to confuse it would be by the use of a target the same size and with the same thermal image as the missile's target, which is almost impossible to achieve as this thermal image depends on multiple factors. And even if you manage to achieve this thermal image the missile is still smart enough to know that if something with the same thermal image appears 90° from the course of the target it was following it cannot be its intended target as this cannot maneuver that fast

This is only possible if the jet is accelerating because if the jet is on constant velocity, the momentum of the jet would carry on with the missile, making it equally as fast as the jet. If the jet is decelerating though, the missile would be propeller towards the jet even faster than it, due to G force.
