The thing about turning off your lightsaber is that if you are fighting someone who isn't doing movie choreography where they're hitting at your blade, turning off your saber would just get you killed. Strikes in duels should be aimed at the opponent, except for the rare circumstance where you want to reposition the enemy's blade. The move is fine if they're trying to open your guard, but most of the time would just get you killed.

Fun Fact: cannonically both the Jedi and Sith are aware of this stratagy, but both dont tend to use it. The Jedi won't because they think it violates the honor in combat, and the Sith don't because they say it makes combat too easy and cheap for them. It's more of a pride thing for them.
