Parmiggiano Reggiano (not the fake American ”parmesan”) is made of Raw Milk and is delicious!

Beware. Organic Valley's Grassmilk "Raw" Cheese isn't raw. It's heated to 158 Fahrenheit, so it's not pasteurized (161). Just because it's not pasteurized doesn't mean it's raw. Their logic is lacking.

In Canada, the only raw dairy we can get (at least here in Ontario) is raw cheese. Most stores carry it but always have to read the ingredient label to find raw or unpasteurized milk listed. I’m going through a bar of raw Canadian made cheddar right now. Very yummy

We have a grocery store here in Pensacola that sells raw milk. It actually says on its lable, not for human consumption. 🤦‍♀️. It's very good.

It's actually raw milk, but the milk does get heated during making.

I make cheese, parmesan, gouda, cheddar, edam, pepper jack...

Depending on the cheese, all will be heated at different temperatures.

What about rennet. Is microbial rennet ok or should we only eat animal rennet? Thanks Dr.

In states where you can’t sell raw dairy in stores (WI for example), “raw” cheese IS heated. It is heated to barely below the threshold to label it “pasteurized.” (I asked the folks at Organic Valley to tell me about their “raw” cheddar cheeses and they told me this.) So they state it’s “not pasteurized, ” since technically it isn’t, but it is DEFINITELY heated, nearly to the same extent as a pasteurized cheese. I’m not sure that actually qualifies as “raw” the way most people think of raw. 🧀 And I’m also unclear if there are any health benefits from “nearly pasteurized” “raw” cheese… are there?? 🤔

Hi Paul, I live in Australia and it isn't legal to buy raw dairy which sucks! It is the nanny country haha. I need to find a dairy farmer.

A topic that I don't think is covered enough - animal rennet vs enzymes. Many enzymes are unlabeled GMO and it seems harder and harder to find cheese made from animal rennet.
