Inspired by a southern road trip, John created his own take on greens.

1/2 batch greens

Ham hock
Diced onion
Minced garlic
16-Oz chicken stock
1 # greens
1/8 cup apple cider vinegar
1 1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cayenne
2 tsp soul food seasoning

We throw the ham hocks into the greens and let them cook away in the greens. They kinda break up on their own. I am totally impressed. Not many people know how to cook collards right. Tfs. They are some good eats. I could eat them every day.

I've made one similar, but instead of ham hock, it used mushroom seasoning and veggie broth to make it vegetarian. Dang good!
