Crispy Suppli AKA Roman Rice Croquettes with Creamy Mozzarella … Ammazza take me right back to Roma 🧡 See below for recipe:

Ingredients:
• 3 tbsp olive oil
• 2 garlic cloves
• 1 tsp chilli flakes
• 3 tsp salt
• fresh basil leaves
• tomato puree, 790 mls 
• 2 cup arborio rice
• 3-4 cups water
• 1 cup freshly grated Parmigiano Reggiano 
• 2 fresh mozzarella, sliced into thick strips
• 3 large egg, beaten
• 1 cup all-purpose flour
• 1 cup bread crumbs
• vegetable oil for frying

In a large frying pan add olive oil, garlic, chilli flakes, tomato purée, salt, basil leaves, and arborio rice. Add water as needed and cook for approximately 20 minutes, stirring often until rice is cooked and liquid free, but creamy. Transfer to a large bowl and remove the garlic and basil leaves. Stir in the Parmigiano Reggiano cheese. Let cool completely and rest for 45 minutes. 

Into the palm of your hand, put 1 tablespoon of the rice mixture and place a stick of mozzarella, then add another tablespoon of the rice mixture on top. Mold into log shapes, making sure that the mozzarella is completely covered and the rice is compact. Roll and coat the suppli in the flour, egg, and then the bread crumbs. In a pot, heat up vegetable oil and gently drop in the suppli. Remove from oil once golden brown and add salt. Serve immediately. Enjoy!
