Hi sis! Got a tip for you! When you don't have apple juice for a recipe, you can steep the peels and cores in an equal amount of water on medium low with a tiny pinch of salt for about 20 to 30 minutes. It won't be apple juice per say. But it will give you that extra kick of apple flavor you want! Looks great! I see a pie in your future! Yum!! Love you!

Tessie - how did you know I was going to can apple pie filling today?? I just got finished and got 3 qts. I used this recipe last year and it turned out really well, but it uses cornstarch. I listened to what you said about not using cornstarch, but I didn't have any clear gel and wasn't going to drive to town (8 mi.) just to buy some. So, I used my same recipe using cornstarch and I'm sure they will be just fine. They made great apple pies last year, and I even added some blueberries to one of them when I made it. Look forward to your videos every day!!

I finished one marathon of your stuff and saw you posted this. Love the way you share your knowledge and make it your own. I made peach pie filling this year 7 quarts I'm a newbie. I thought the peeling of the peaches was a nightmare and the clear gel was OMGosh once that lemon juice hit the pot. I need someone with a good arm to stir. Now I know. I swore I'd never do it again and saw peaches on sale for 77 cents a pound and am fighting myself not to go and get them. Haha I'm a gluten or punishment. Looks marvelous and pretty easy. I'm gonna have to get me more clear gel and try this. Well done Tessie.

You can use arrowroot, it thickens clear unlike cornstarch which is cloudy. Used it for years while working in a restaurant making sauces.
