Bodega Style Bacon, Egg and Cheese Sandwich

Serves 1
“Serve with shitty coffee” – Anthony Bourdain.
This recipe is straight from the man himself who inspired me in so many ways. All I did different here is getting the two different textures of cheese. One slice is fully melted within the egg and the other is slightly melted when added just before serving.
Ingredients
3 strips of bacon
1 kaiser roll, sliced
½ tbsp butter
3 eggs
Salt
Freshly cracked pepper
2 slices American cheese
Method
1. Lay bacon down in a small to medium cast iron skillet. Cook bacon over medium heat, turning the strips as needed until they reach the desired crispness, about 8 to 12 minutes. Remove bacon and set aside.
2. In the same skillet, add kaiser roll face down for a couple minutes to soak up some of the bacon grease to warm through. Try not to toast the bread. Set aside.
3. Add butter to skillet and whisk eggs in a small bowl. Pour egg mixture into skillet and season with salt and freshly cracked pepper. Move around the egg mixture with a spatula creating holes to help evenly cook the egg. As the egg is cooking add a slice of American cheese in the middle and fold all the edges of the egg up and over the cheese to completely cover it.
4. Lay bottom half of kaiser roll on a flat work surface. Add the folded egg on top of the bun. Add another slice of American cheese, the cooked bacon and finish with the top half of the bun. Enjoy!
