Baking vs Frying vs Steaming Bread Dough

My debut cookbook, Dessert Course, is now available for preorder everywhere books are sold!

Like much of my content here, there’s a huge focus in the book on recipes, experiments, and adjustments. I wanted my cookbook to be more than just a list of recipes, and instead also use each written recipe as an opportunity to learn something new about baking.

Steamed bread is called knedlik in the Czech Republic and is one of the most popular and most common side dishes with sauces. We eat it with cutlery and it translates into English as dumpling, but it's not very accurate because most people think of small stuffed pieces of unleavened dough. In the Czech Republic, however, we love knedlik with sauces based on root vegetables, cream and dill or with tomatoes.

However, you could also mention the half-steamed and half-baked method used, for example, for bagels.

Thank you for video 🫡

For the steamed bun, here are 2 tips to avoid the lumpy appearance and achieve a beautifully smooth exterior:
1. Use all purpose (lower protein) flour instead of bread flour
2. Allow the cooked buns to cool inside the steaming vessel before removing the lid

Love how he never bashes a method of cooking something or calls it ‘wrong’ without it actually causing problems. Just tells you what doing something a certain way will result in, so you can pick which suits your taste

there's a chinese version of the steamed bread that's called mantou! it's a ball of dough with no filling. it's commonly eaten with dips such as red fermented tofu, and it's very good !

I love steamed bread so much. The texture of it is amazing to me and mixing it with a sweet and savory sauce is heavenly

Love these videos as a fellow food geek and professional baker. You should do a video on bread in a Dutch oven vs an oven sprayed with water for steam or baking stones/steels. Pizza. Also milk breads made with a milk roux or autolyse. Donuts are a great one for oil temps, proofing, and enrichment.

I have one of these wooden steaming baskets, but I never thought about making bread in it. Might try this at some point.
To be honest, I really should use this thing more often in general.

Honestly, I wasn't sure about steamed custard buns due to the stickiness of the outside, but when I tried some I absolutely loved them. And then I made them homemade and they were somehow JUST as good, if not better tasting. One of my favorite snacks, even if they take a while for me to make!!
