Some more ideas:

Have Martial Classes sharpen their blades with whetstones. Giving them + 1 damage for the next 1D6 times they hit an opponent.

Have a Bard Tell Tales that invigorate the party as they go to sleep. Giving each player a +1 to their next save the following day.

Do mini games with dice and cards, great ways to Role play and find out who the true gamblers are, a Fighter may charge a dragon but fold when a Wizard goes All In.

Works really well with the Gritty Realism rest rules. A long rest is a week of downtime in a safe location, so players spend it doing things like researching magic items they might quest for, preparing equipment, and interacting with NPCs.

Another thing i like to use is a Lookout system. The pleyers take 3 shifts at night in order to protect the camp. They make PEC rolls to keep an eye on the enviroment. 16-20 means they had a safe watch, 11-15 means they spotted something but its either not dangerous or is something usful/lore specific, 5-10 means they spot an ambush this allows them to roll initiative, 1-4 means they fail to spot an ambush so the enemies get a surprise round. There will be 3 watches in a night, 3 successes (11-20) means they get a Long Rest & nothing bad happened all night.

If they roll 1-10 the the Long Rest is disrupted & a battle will happen. At this point when the battle ends the long rest is treated as a Short Rest. I also dont allow for rests in areas now considered "dangerous".

If you play online and really want to ramp up the role-play, set up a dedicated in-character chat. I cannot recommend it enough. There, you can post a little narrative moments between your characters; anything from small talk to entire scenes. The best part is, you can add to it at any time, even when you’re not in an active session. Although as an unwritten rule, my group has never implemented any game mechanics in our IC chat.

Once, we basically wrote an entire novella chapter in the IC chat, and it was nothing but our party sharing a drink with a noble and reminiscing over past adventures. As a bonus, that made the noble’s betrayal and attack against our party *way* more impactful than it would’ve been otherwise.

My DM let me take the heart and liver from a troll. I made portions of healing and a potion of regeneration

So, I want some help from just people in the community. My party recently saved slaves from a village and are looking to return them to their home country as for long rest stuff here am I being boring by having them take care of the slaves on their downtime by allowing them to prepare their meals and sort out their injuries?
