Find a house out in the country with solar panels and a wood stove. Away from town you will be on a well and septic tank so learn how to operate a cucka sucka truck.
Now get chickens and horses. Their will be plenty left unattended so help yourself. After that you can grow potatoes, mushrooms, garlic, and onions with minimum effort.
You will see a steep uptick in wildlife with humans gone so after the first couple years (about the time your canned stuff is expired and the jerky is a memory) hunting will an option for even the lightly skilled. Remember, you'll not have to worry about the game wardens so use bait piles and spot lights to your little hearts content!
And as always, stockpile all the books you can get. If nothing else, you can burn the useless ones for heat or use them as toilet paper.

This is the most inaccurate info I’ve ever heard of. Canned goods can last triple if not quadruple the time he gave, depending on the scenario that made the last person “the last person on earth” and given that he said the person and the animals have to fight each other over food, there will be plenty of wildlife to hunt.
