🥖 Here's what you'll need:
* 500g of strong bread flour (plus extra for dusting)
* 7g of dried fast-action yeast
* 3 tsp of fine sea salt
* 5 tbsp of olive oil (plus extra for the tin and to serve)
* 1 tsp of garlic granules
* 4 sun dried tomatoes
* 30g Parsley


📝 Now, here's how you can make this mouthwatering focaccia:
👉 STEP 1:
In a large mixing bowl, pour in the flour. To one side of the flour, add the yeast, and to the other side, add the fine salt. Mix everything together. This separation at the beginning helps the yeast thrive without being hindered by the salt.
👉 STEP 2:
Create a well in the middle of the flour and add 2 tbsp of oil and 350-400ml of lukewarm water gradually. Keep adding the water until you have a slightly sticky dough (you might not need all the water). Sprinkle some flour on your work surface and transfer the dough onto it, making sure to scrape around the sides of the bowl. Knead the dough for 5-10 minutes until it becomes soft and less sticky. Then, place the dough in a clean bowl, cover it with a cozy tea towel, and let it prove for 1 hour until it doubles in size.
👉 STEP 3:
Oil a rectangle, shallow tin measuring 25 x 35cm. Transfer the dough onto your work surface and stretch it to fit the tin. Cover it with a tea towel and let it prove for an additional 35-45 minutes.
👉 STEP 4:
Preheat your oven to 220C/200C fan/gas 7. Create dimples in the dough by pressing your fingers into it. In a small bowl, mix together 1½ tbsp of olive oil, 1 tsp garlic granules & 1 tsp sea salt. Drizzle this mixture over the bread. Enhance the flavours by gently pushing sprigs of parsley & sun-dried tomatoes into the dimples.
👉 STEP 5:
Bake your focaccia in the oven for approximately 20 minutes or until it turns a beautiful golden colour. While the bread is still hot, drizzle 1-2 tbsp of olive oil over it. Cut it into squares and serve it warm or cold. For an extra touch, feel free to add more olive oil if you'd like.
