The star of this show wasn't the artichoke, it was the spearmint and garlic fried in olive oil. I must do that again with steak or chicken. Wow, that flavor combination is amazing and it smelled like my local Asian restaurant that I love so much. So 3 artichokes cleaned and set in lemon water until I used them. Fry garlic, spearmint and parsley in olive oil with the artichokes. After a few minutes of frying add some water carefully so you don't splatter the oil and cook for 15 minutes for a small artichoke.
