Cold jelly noodles made from mung bean starch! I thought it was more difficult to make but you only need to add water. I guess I could’ve started making these as a snack yeaaars ago. It’s called Liang Fen (凉粉) in Chinese, it’s popular in northern China and it always reminds me of the food when I went to visit Xi’an! Delicious!

1 cup mung bean starch mixed into 1 cup cool water, pour batter slowly into 4 cups hot water coming to a boil (when you start to see bubbles on the bottom of the pot). Continue mixing on low heat until it thickens. Pour into container and let it cool for a few hours or in the fridge overnight. Slice, grate, scrap into noodles. Add sauce: I like garlic, Chinese black vinegar, sesame oil, soy sauce, sugar, and chili oil topped with green onions, cilantro and peanuts.

You can do it with any starch, even cornstarch! It doesn’t have to be mung bean.
