Here's some rutabaga facts and a healthy Roasted Rutabaga Recipe that makes a great alternative to potato. Rutabaga is a low-carb root vegetable you can use just like a potato, but with less than half the calories and carbs of potato. In appearance rutabaga is like a larger version of a turnip, but it tastes a bit sweeter. It's related to cabbage, and has a very mild cabbage taste. Rutabaga is great baked in the oven, cooked in soups, and I love it shredded and cooked into breakfast hash browns. Like most produce, when buying rutabaga choose one that's firm and seems heavy for it's size. Give a rutabaga recipe a try and let me know what you think.

What You Need for Baked Rutabaga

RUTABAGA cubed
OLIVE OIL
SALT
CHILI PEPPER
BLACK PEPPER
ROSEMARY

How to Roast Rutabaga in the Oven

Buy rutabaga that's heavy for it's size and not dried out.
Slice the end off the rutabaga and cut away the outer skin with a knife.
Cut the rutabaga into roughly 1/2" square cubes.
Toss the rutabaga cubes in a bowl with olive oil.
Add seasoning and toss until rutabaga is well coated
Spread rutabaga on an ungreased baking sheet. Aluminium foil is a good idea.
Bake in a preheated oven at 400 degrees Fahrenheit for approximately 45 minutes.
Halfway through the cooking process, you can check on the rutabaga and give them a turn to prevent
overcooking on one side.

Is Rutabaga Healthier than Potato?

Rutabaga has LESS THAN HALF the calories of potato.
Rutabaga has 60% FEWER CARBS than potato.
Rutabaga contains about the same amount of Dietary Fiber as potato.
Potato wins the vitamin count; rutabaga provides more Vitamin C than potato, but overall, is less nutrient rich than potato.

So, don't give up on potatoes, but add rutabaga into your menu rotation, it'll make a great change-up from the regular
potato routine.

I peeled and cut up rutabaga for the first time today. I washed them (no scrubbing necessary) and wrapped 2 of them at a time in a damp dish towel, microwaving them for 5 minutes. After letting them cool, I cut off both ends (it was like butter) and easily peeled them with a regular potatopeeler, then, cutting them into 1/2" cubes. So easy!

Just discovered rutabagas and I am so upset that i didn’t try it sooner! So good. Why isn’t it more popular. I would never miss potatoes had I known about rutabagas. I boiled mine for 20 mins and then pan fried then with avacado oil onion powder, garlic powder, cayenne, paprika, salt pepper & Goya sazon seasoning 😘🤌. I’m using the rest to make mashed rutabagas tonight. Can’t wait to make fries with them. The taste is great. Texture identical to a potato with cooked all the way through. If undercooked it will be a bit fibrous

Lol, after growing up on these, in Mississippi, cubed and boiled with bacon grease, and served with cornbread- I Was so glad to see them in a Norwegian grocery store. That is the first time, I realized they were Scandinavian in the first place! I love them served with cornbread and pepper sauce!

This is a staple of all of our holiday meals. Thanks Giving, Christmas and Easter. I used to boil mine to mash it but now I cook it in the pressure cooker, mash it and mix with a touch of brown sugar or coconut palm sugar and butter. It goes fast. Everyone loves it.

I love rutabaga and can’t wait to try your recipe. I’ve always made it like mash potatoes. It’s much easier to cut it in 3/4 inch slices than half way through it. Also if you slice off the root you can use that as a nice base on a cutting board and then peel it using a sharp vegetable peeler while you twirl the rutabaga around on it’s even base you just made by cutting off the root. Mashed rutabaga makes a great Thanksgiving side dish. It’s been in my family for years.

thank you this was very nice . I boil the cubes for 5 to 7 minutes then cool them off before oven time and today along with the olive oil i added (zaatar ) it is a Lebanese mixture of Dried Thyme Sumac sesame seeds and table salt also i added a touch of Cumin a touch of chili , next time i am going to try soy sauce soaking after i boil them then decide what spices i will add . All the best

As a Norwegian this is a staple food for me. Absolutely delicious, even raw.

Just want to point out that Carbs are NOT unhealthy in any way.

I live in Sweden... that's old staple in our eating. Not surprised to see we brought them... Here they are called kålrot.. basicly cabbageroot. I use them in soup or have them as mash... mixed with potatoes and carrots. Nom nom....

I LOVE mashed Rutabagas/Turnips. Always a Thanksgiving staple while I was growing up. Now that I have found that I am diabetic, I can't eat regular potatoes anymore but Rutabagas/Turnips are very diabetic friendly and in my opinion tastes much better. Its hard to find them where I live (The Bronx) so when I do find them I buy an enormous stock and mash them up and freeze them to have them all year round. Very freezer friendly, its filling, delicious and I don't feel like I'm missing regular foods that I cannot eat. I just wish they were more available everywhere.

We grew some huuuuge Rutabaga last year and cooked one up according to you recipe and it was real tasty! I have already planted some more Rutabaga in the garden for this year and can't wait to get into it....

Yes in England, we call them Swedes, we boil them up with sliced carrots, and when cooked, we mash them, adding pepper and butter, we love them
