In Kerala we don't use bread. It's usually just rice, coconut, a little cooked rice, yeast, salt, and a pinch of sugar to promote the yeast. My grandma taught me how to make Appam and as a student in the US, it's a good taste of home. And if you're making more, you don't have to reintroduce the yeast, just add a little batter that is left over from the previous preparation. Personally I like to keep my yeast culture alive through this method and I always use a little leftover batter to make new batter.

For appan either we add toddy or yeast for fermentation, salt and sugar is also added sugar to prune the yeast, and salt for taste ...also it's eaten with either egg or chicken stew.

Sanjeev sir bread ke alawa bhigoya hua safed poha daal sakte hai maida bread digest karna mushkil hai.dhoodh ya nariyal paani daal sakte hai kya mujhe bahut confusion hai because I am making first time this recipe.

Sanjeev ji meine aapka process follow kiya but the batter did not get fermented. Though It's hot summer here.. What can be done? Pls suggest.

add sugar in coconut water and keep it overnight.. can use this instead of yeast

Dear chef ..it is not appam chiti. It is appachatti correctly. And in Thiruvananthapuram appam is called aappam. --Preethi

Please use such safe utensils...so dat along with good food people realize d importance of cooking in d right vessels for good health.
Toxic nonstick vessels r used today by more & more people...for comfort & convenience putting their health at risk
