Alot Of the flavor in fresh vanilla beans it's destroyed by heat.

Iced coffee is a perfect vehicle for getting some of those more delicate and rare flavors out of vanilla but you shouldn't cook it if you want to preserve those.

And if you don't want to preserve those, you should just use imitation vanilla which will give you that kick of vanillin flavor which is the predominant thing left when you cook it which is still delicious missing the nuance.
