Baked Feta Cheese Pasta

3 shallots
8 to 9 cloves garlic
2 cups small/cherry tomatoes
1 block vegan feta cheese (I used Violife)
4 tablespoons extra virgin olive oil
1 to 2 tablespoons balsamic vinegar
2 tablespoons Italian seasoning
Salt and pepper
Fresh thyme
1 box/container pasta
Fresh basil

What a lovely story. This brought tears to my eyes. The first part of the story resonated with me as I am 46 and still single. My ex of 2 yrs left me during covid. I gave up on looking for "the one" and decided to enjoy my single life. I am focusing on my career, taking online courses, volunteering when I can and hopefully will travel a lot once covid is over. This hit me so abruptly, and so deeply.

I haven’t properly thought about my current relationship like that before.

It’s a first to be in a long running relationship with someone who truly cares about me, and although we fight, we never give each other an empty sorry, and there’s a genuine pain at the thought of hurting, or making the other cry.
