Energy Balls for Kids Breakfast
Ingredients (for 30-35 balls)
• Raw peanuts 1.5 cups
• Instant oats 2 cup
• Pitted dates 1 cup (use 1.5 cups of dates if you are not adding peanut butter)
• Peanut butter 1/3 cup (optional)
• Cocoa powder 2 tbsp
• Honey 2-4 tbsp
Preparation
1. Soak the pitted dates in half cup boiling water for at least half an hour until soft.
2. Meanwhile, dry roast the raw peanuts in a pan on a low flame until crunchy. Allow to cool and crush into small chunks for coating the balls.
3. Dry roast the instant oats on low flame until no moisture remains. Allow to cool to room temperature and then grind into fine powder.
4. Add the soaked dates along with its water to a chopper and grind into paste.
5. Add peanut butter and grind again.
6. Add this paste to a mixing bowl and add cocoa powder. Mix well using a spatula.
7. Now sift the crushed peanuts to separate the powder from the chunks. Add this powder to the date paste.
8. Add 2 handful peanut chunks to the dates and mix everything.
9. Add oats powder and mix. Taste and add honey if the sweetness is low.
10. If the mixture is still dry you can add 1-2 tbsp drinking water and mix. The mixture should be like a thick dough.
11. Shape the dough into 30-35 balls.
12. Coat each ball into peanuts.
13. Refrigerate and enjoy!
14. Storage: Date balls can be refrigerated up to 1 month.
