Mercedes likes religious things like a Goddess Statue. So go to the Cathedral, rip out one of the statues, and drag it to her. Also all girls in this game like flowers for some reason.
Also make sure to enter Dorothea into the Dance Contest in the quests. She'll get access to the Dancer Class. It's great, she can stab things and use magic, do it.
Also Byleth is about 20-21. It's never outright stated in-game but based upon the timeline, that's there approximate age.
