Another meta-level to this: a "chicken" is a person consumed by fear, unable to do the thing that is dangerous or confronting. Tyler is calling the narrator fearful, and then at the end the narrator actually smells the burning chicken.

Either the chicken is dead and burnt, or it is inside the narrator and he himself is burning.
