Today I'm showing you what I ate in a day with 3 easy healthy vegan recipes!

RECIPES (full recipes and quantities on my blog) :

Breakfast:
sweet potato
spinach
mushrooms
salt & pepper
paprika

Lunch:
tofu
quinoa
steamed veggies (carrots, bell pepper, broccoli)
sauce:
tahini
soy sauce
maple syrup
ground ginger
lime juice

Dinner:
butternut squash soup
vegan cheese or nutritional yeast
pepper and paprika
spinach
pasta

I'm Japanese so I eat tofu every day, but I'm always surprised at the way to eat tofu cuz I've never baked tofu in oven. This is a new discovery:)
