There are three types of yeast:

Fresh yeast is least widely available and is not sold in supermarkets, but can be bought online. It comes in small beige blocks that feel creamy to touch. They should smell fresh and not feel dry.

Fast-action dried yeast, sometimes called ‘easy blend’ yeast is widely available. It’s the easiest yeast to use as it requires no preparation.

Dried active yeast is available from most supermarkets but it takes a little preparation before you can add it to a recipe.

When deciding how to use yeast, always follow your recipe and use appropriate measurements of ingredients. Once you’ve learned how to activate yeast, you’re ready to take on any bread or baking recipe which requires yeast.

In Sweden, fresh yeast is the most common and there are two types: one for plain bread and one for doughs with sugar. Dry yeast is very uncommon and recipes will always call for fresh yeast. You don’t need to activate fresh yeast; the point is that is already hydrated and active.

Fresh yeast to dry yeast conversion and vice versa
from fresh yeast to dry – divide amount by 3, eg. instead of 30 grams of fresh yeast use 10 grams of dry.
from dry yeast to fresh – multiply by 3, meaning 7 grams or dry yeast becomes 21 grams of fresh.

I get my fresh yeast from the bakery section in Tesco where they GIVE me a block whenever I ask. The packet yeasts have chemicals in. I avoid them.

😣 I'm only using active dry yeast in a glass jar from now on. I want to see it foam before I take another step in baking anything. I've had too many failures; wasted time and ingredients.

You can buy fresh yeast in Morrisons at their instore bakery along with their bread flour, they have a good selection, yeast costs 20p for 50 g.

Is it safe to eat a block of yeast? I do recall that i was eating them when i was young abut 7 or 8, but sometime later my stomach hurt, so then i stopped consuming, but recently the urge to eat that stuff has resurfaced, is it safe to consume?
