All you need to gather leaves is a pair of shears. It's cheaper (two iron) and no enchanting required. You can collect other things with shears too, like vines (mossy block variants, anyone?)!

I’d say 5 near-deaths. “Almost dying” in Minecraft is pretty subjective and comes down to what the player defines it as, but at the very least being brought down to under 4 hearts is definitely considered nearly dying, and that happened 5 times. The others you didn’t get low enough and killed the mobs/avoided near-death before reaching low hearts.

FYI: Oak trees are the only ones that drop apples. Definitely prioritize those if your starting a village
Edit: also invest in a stone cutter when tackling tasks like replacing all the cobble with stone bricks in the mansion. You get a 1 to 1 conversion when using the stone cutter vs. losing a couple extra blocks crafting
