I think there's actually evidence in the game that disproves the whole 8 inches thing. I know nintendo has said that he's 8 inches but information directly from the games should take priority. We can compare Kirby's size to objects in forgotten land (which is earth adjacent) and shiver star (which is earth) to see that he's taller than 8 inches. However, the most compelling piece of evidence is that Kirby interacts with Samus in dreamland 3. Samus is about 6 feet tall. Kirby is about half her height which would put him around 3 feet tall. I also want to add that Samus is on the main path and interacting with her is required for the true ending which means it's should be considered canon and not just a fun one off easter egg.
