INGREDIENTS
3 oz (86 g) elbow macaroni pasta
10 oz (296 mL) water
1/2 Tbsp unsalted butter
1/8 tsp paprika
1/8 tsp onion powder
1/8 tsp to 1/4 tsp salt
6 oz ( 174 mL ) heavy cream (room temperature)
3 oz (86 g) medium cheddar cheese shredded
1 Tbsp plain bread crumbs
1/2 Tbsp melted butter
1/2 Tbsp to 1 Tbsp grated parmesan cheese
small 1. 25 quart pot
INSTRUCTIONS
- In small pot add uncooked elbow macaroni, water, butter, paprika, onion powder, salt and bring to a simmer
- Mix and stir for 8 to 10 minutes or until water is almost absorbed and evaporated
- Lower the heat between a medium to medium low setting
- Now add heavy cream and shredded cheese
- Mix and combine well until cheese sauce is smooth and creamy
- On a low heat bring to a simmer and continue to stir and cook for an additional 3 minutes
- In a small bowl mix bread crumbs, melted butter and parmesan cheese
- In a buttered small baking dish (I used a size 13-47 Le Creuset au gratin dish) add cooked mac n cheese and top with bread crumb mixture)
- Broil for 45 seconds or until topping is golden brown
- This is a meal portion for one person or a side portion for 2 people
