Loved your comments on the Irish becoming familiar with brisket by their association with the Jewish. I am 80 and I was a butcher all my life and know better. Each ethnicity that came to our country had to overcome prejudice and sometimes, hate. The real story is that most butcher shops had a Corning Barrel in there store. Often the cuts of meat that did not sell went into the barrel for Corning. Not because of the flavor but because it preserved the meat for an extended period of time. Because the meat would absorb quite a bit of water, it would gain weight. Therefore to get rid of the less desirable cuts, they could sell it cheaper and still make their profits. That is the reason that corned beef shrinks so much in the cooking process. It can shrink in excess of 40%. The Irish like many other immigrants had little money. They ate what they could afford. Getting the most for the least cost was the real reason for the tradition. AND NOW, you know the rest of the story.

My boss always makes corn beef and cabbage for his employees to to eat on st Patrick day I've been working for him about 14 years now and he's done it every year same with thanks giving the day before he makes a good meal for his employees to enjoy

Excellent! I have a big cast iron pot ready for this Sunday's corn beef! I am Hebrew and this supper was a favorite year round. It is an Ashkenazi dish from Eastern/Central Europe.

I use beef broth worcestshire sauce in mine instead of water but the video was handy as I just got a Dutch oven.

I love corned beef and cabbage. That looked great. I made a cabbage meal last night. It didn’t include corned beef though, but it did make me realize I need a larger enameled Dutch oven. I used a black iron one instead.
Anyway I watched this while drinking my morning French press coffee. Of course my coffee before work isn’t as good as yours was.
