I can see how that Japanese slicer/peeler thingy could be helpful to people who find it difficult to use a knife (coordination issues, tremors, etc.). That's actually pretty nifty!
There's a bunch of different straw brushes (brushes for straws) available on Amazon.

The stainless steel straws bought a few years ago and included a cleaning brush.

Cupcake corer was my favorite. I'd look for a stainless steel version.
